Otherwise known as a healthier version of guacamole made with edamame. I while back, I saw a recipe for Edamole on Cara’s awesome blog, Cara’s Cravings. I know I have raved about her recipes before, so you should check them out. Not to mention her amazing photography skills!
One of my friends invited me over for a “healthy Mexican” night, so I thought this dip would fit the bill perfectly.
I mostly followed her recipe, but was in a bit of a time crunch so I didn’t have all the fresh stuff on hand. Instead I used a plethora of seasonings until it tasted just right.
Here is Cara’s recipe for Edamole.
My version was prepared the same way, but here are the ingredients I used instead for a quicker version:
1 cup frozen shelled edamame
1/4 cup nonfat plain Greek yogurt
1 T. water
2 medium avocados
1/2 t. paprika
1-2 T. Simply Salsa mix from Tastefully Simple
3/4 teaspoon salt
1 T. lime juice
1 T. cumin
1 T. chili powder
It’s not quite as thick as quac, so I think it would be good as a sandwich spread as well. It was a hit with the ladies! I will definitely be making this one again.
