Simple Suppers: TJ’s Thai Red Curry Sauce

I would be lying if I said I cooked a new creation or tried a new recipe each day of the week.  On average, we probably cook 3 meals together a week.  The rest are either on my own or whatever we make is simple.  But, sometimes the simplicity makes it that much more appealing.  I think using some shortcut ingredients like ready made sauces or mixes can be a huge help when you are short on time or don’t have everything on hand.  I am going to be including more of these types of meals on the blog.  I have learned so much from other people blogging what some would consider rather mundane, so I have to think someone reading this could also benefit from the things I do on a whim, mostly with success.

First up on Simple Suppers: Trader Joe’s Thai Red Curry Sauce.  I actually saw a rave review of this stuff from Liz on Savory Spicy Sweet about a month ago.  I have always enjoyed the recipes and opinions on her blog, so I figured it was a must buy next time I made it to TJ’s.  Which, by the way, is about once every 10 days, so it wasn’t a long wait. 

We decided on a simple chicken and broccoli dish simmered in the sauce then served over brown rice. Could not have been easier, or in fact, tastier!  I was a big fan of this sauce.  I don’t consider myself a Thai food connoisseur (yet), but you couldn’t ask for much more from a bottle.  This didn’t photograph well, but you get the idea.

In the mix:

-2 medium sized boneless skinless chicken breasts, cut into bite sized pieces
-2 cups broccoli
about 1/2 the bottle of sauce
-brown rice

I started by cooking the chicken per usual with cooking spray and sprinkled with some chili powder.  Once the chicken was cooked I added the broccoli to the pan for a few minutes or so, then turned down the heat and added the sauce.  (The sauce is really thick, so I added a little bit of water to thin it out.  You could also do this with milk, or not at all depending on your preference).  I let it simmer for a while until the broccoli was good and saucy.  Serve over rice…dinner is done.
