Zucchini Boats

As I have mentioned before, our band of rogue squirrels likes to eat everything in our garden except the zucchini. At least it's something to not make me feel completely defeated. We have been able to procure about 5 zukes now. I plan to try my hand at bread and muffins, but in the mean time have been grilling and baking them. I have taken quite a liking to making zucchini boats.

It can't get much easier. So far my creations have consisted of ground beef or Trader Joe's chicken sausage, cheese, and the zucchini. I know, I know, nothing fancy or exciting but it is a great way to enjoy a meal that seems like it should be unhealthy. Zucchini is naturally low in calories and makes the perfect vessel for any fun toppings. Basically all I do is slice it in half, scoop out the middles to form a boat, and bake at 350 for a while until it gets softened up. In the meantime, I chop up the middles and mix them with my cheese and meat, then stuff the boats with my fillings. Put back in the oven until cheese is melty and zuke is fork tender.
